Good Monday, Heroes! I got to interview Chef Ellie Krieger recently and she gave me some super neat suggestions for healthy and interesting ways to use grapes in snack and party foods. Enjoy:

I really liked Chef Ellie’s suggestions and have already tried out a few of them. I’m hoping to get the frozen skewer treat done this week.

In addition, I was blessed to receive a copy of Ellie’s book: Comfort Food Fix: Feel-Good Favorites Made Healthy. Oh my goodness, it’s aMAZing! Somehow she knew exactly what kind of foods I love best. From breakfast to dessert, she covers all sorts of wonderful dishes and makes them tasty and healthy in the process. No joke!

Most recipes have a pretty substantial reduction in calories, and many have an increase in fiber. For example, I just now flipped the book open to a random recipe and landed on the Stuffed Mushrooms. She uses button mushrooms and they’re stuffed with shallots, garlic, breadcrumbs, sun-dried tomatoes, oregano, salt, pepper, and parmesan cheese. With a serving size of 4 mushrooms before, you’d have a 360 calorie, 1 gram of fiber snack. After, it’s 200 calories with 4 grams of fiber.
